Les Maisons du Goût takes part in many works aiming to improve knowledge, methods and practices in the field of sensory evaluation and more generally consumer science. They are implicated in regional, national and European group research programs.

 

Examples of research programs:


- setting up laboratory inter-comparison tests for profiling performances and triangular tests,

 

- setting up automated tools to calculate the performances of qualified subjects or experts,

 

- impact of panel numbers and the number of solicitations of consumers during hedonic studies,

 

- ANR program for setting up a tool aimed at evaluating consumer hedonicity with regard to sweet, salty or fatty foods.

 

By virtue of it being part of Actilait (Agro-industrial technical institute in the dairy sector), Les Maisons du Goût is regularly involved in general interest missions for the dairy sector.

It is thus that a cheese aroma library, reference tool potentially illustrating 30 aromatic notes present in dairy products, was established.
A jury of experts capable of characterising in great detail the aromatic profile of cheeses was also developed to reply to very specific approaches (with the possibility of detecting 110 odour, aroma and taste descriptors).
